Aydın Olive
It grows in Aydın region. It is hard, shiny, large and has a bitter taste. It is an olive variety consumed in the military in rural areas in the East and Southeast, sought and used in export.
In this region, 3 types of olives are used while processing green olives. These are Aydın Kaba, Aydın Memecik and Aydın Domat types. Green olives processed in this region soften during processing, become dark green in color, and olives left in brine may darken where they are exhibited. It is not long lasting and tastes sour. Aydın Domat type olive is a healthier and more robust olive variety than other Aydın varieties.
