Chickpea was first discovered by Sheikh Murat Gazi in 1370-1390. He discovered the heating and soaking of chickpeas. Chickpea is a type of nut obtained by processing chickpeas. It is obtained by roasting chickpeas in special ovens after being spiced for days. This process goes through the following stages: Chickpea is subjected to annealing, ie heating, 3 times in 3 separate days. After the third annealing, it is laid on a floor and left to rest. This covers a period of approximately 15 days. Chickpeas are soaked and swollen in the evening of the day they are made. The next day, the chickpeas are first heated in a pan, then their shells are removed by pressing them lightly with a tool called "mafrak". During this process, some of the chickpeas are divided into two. These two are separated from the whole by a sieve. Pods are also called "broken chickpeas". These are mostly used to make chickpea flour. All chickpeas are offered for sale in different forms. After being roasted again, they gain a black-spotted appearance on a yellow background. This is called "double roasted chickpeas". Fresh chickpeas should disperse like flour when squeezed between two fingers. According to a rumor about the name Tavşanlı; It is believed that this is how its name came about, as it is described as "breadful glorious" and refers to the tempering or roasting used in making chickpeas. For this reason, this district is known as the land of chickpeas. Currently, there are 40 types of chickpeas. But skilful masters continue to work every day to produce a new type of roasted chickpea. Main Types of Chickpeas: Roasted, sweet, white, crispy, salty, spicy, honey, poppy, sesame, chocolate, vanilla, clove, sauce, coffee, banana, orange flavored, cherry flavored, coconut varieties are sold in stores and shops. It is offered in every corner of our city. Tavsanli roasted chickpea, which was awarded the 2003 International Quality Award at the ceremony held in Paris, the capital of France, was nominated for the 21st Century Worldwide Quality Award by the world marketing organization.
