Sivas Kazan Bagel
One of the flavors unique to Sivas is the cauldron bagel. The dough, consisting of flour, salt and yeast, is poured into cauldrons filled with a mixture of boiling molasses and water after it is shaped, and it absorbs this flavor and is cooked in stone ovens where hornbeam wood is burned with plenty of sesame. Cauliflower bagel is a street delicacy that involuntarily draws you to its side with its delicious smell as you pass by and leaves ordinary bagels in the shade with its crispness.
