Abagannuş
The local appetizer of Hatay is eggplant salad abagannuş, also known as babagannuş. First, roast the eggplant, peppers and tomatoes. After peeling the skins, finely chop them and put them in a mixing bowl. Then crush the garlic with a wooden mallet and add it to the mixing bowl. Add pomegranate syrup, olive oil and salt and mix. Finally, take it to the serving plate and you can decorate it according to your wishes and serve the spices you want. You can also finely chop the fresh mint and parsley, add them and blend them.
