Ağzıaçığı

A dough as soft as an earlobe is prepared by kneading well with flour, salt and water. The prepared dough is divided into four parts. Each piece is rolled out to the size of a ready-made phyllo and a mixture of heated oil and tallow is applied on it. The dough is folded into a bundle and thinned again with a rolling pin and oiled. After this process is repeated several times, the dough in the form of a bundle is divided into small pieces. On the other hand, a mortar is made by mixing minced meat, eggs, parsley. The cut pieces are opened in a round shape with a thick center and thin edges. A little mortar is placed in the middle and the edges are folded by overlapping each other in the form of a pile. It is placed on a greased tray at intervals, oiled and baked for 40 minutes in an oven preheated to 200 degrees.
