Arabaşı Soup

One of Yozgat's geographically marked delicacies, Arabaşı is unique to Yozgat, one of the indispensables of cold winter nights and one of the most important local dishes of the city. It is a kind of snack that is served during the conversations made after dinner and before going to bed in Yozgat's long winter nights. For this reason, although the original name of the dish is "intera vaccine", it has taken the form of cartage in folklore. The main ingredients of Yozgat Arabaşısı are flour, water and goose meat. Depending on the taste, turkey or chicken meat can be preferred.
