Çakıstez

Çakıstez is the name given to the pickled olives unique to Cyprus. Since the brine period of these olives is short, their color may be green or yellow. The brine contains salt, thyme, lemon and garlic. While serving, olive oil is drizzled on it and coriander seeds are put on it. It is consumed both for breakfast and as an appetizer with meals.
