Çibörek
One of the delicacies unique to Eskişehir is çibörek, which is actually a Crimean Tatar dish. Tatars, who have a great share in the cultural enrichment of the city, have also given names such as Çiberek and Şırbörek to this addictive pastry. The recipe, which means "delicious pastry" in the Kipchak dialect, is often misspelled and pronounced as "raw pastry" in our country. In the original recipe of Çibörek, low-fat ground beef and finely chopped onions are used. Of course, it can also be prepared with cheese upon request. The pastries jump into the copious amounts of oil during the cooking phase. However, contrary to popular belief, a thick çibörek never absorbs much oil. It still retains its crispiness. You can also prefer frothy buttermilk, like me, next to your strawberries.
