Dartı Keşkek

Adapazarı Dartı Keşkek is a local dish that is cooked and served to guests on special occasions such as weddings, circumcision, and holidays. The distinctive features of the product are; It is made with chicken meat and the use of “darti prepared with red pepper and black pepper in fried butter”, which is prepared specifically for the Adapazarı region.

While preparing the darts, the milk is kept for 1.5-3 hours before boiling. Then, the oily layer formed on it is taken and deposited in a pot. The lightly oily layer in the pot is boiled on a low fire stove until it turns red. In the meantime, the consistency of the dart thickens and pores (craters) form on the surface of the dart. The dart surface is taken from the fire when its red color and pores on the surface are formed. It is poured into a container and is expected to freeze there. The oily part freezes at the top and the residue at the bottom. This product is called dart. It is an indispensable auxiliary element of Adapazarı keşkek.
