Dobo
There are many dishes that reflect Mardin's fondness for meat. One of them is the famous dobo. You may not have heard of the dobo before, but in fact, the arm part of the lamb you know is called dobo in Mardin. Dobo is actually an Assyrian dish, but most of Mardin's local dishes come from the Assyrian cuisine. The meat is made with lots of garlic and yoghurt, and served with flavors such as onion, eggplant and rice.
