Doğaba
Doğaba food, which contains many ingredients, is difficult to prepare, and whose taste is worth all the efforts, has a great place among the local dishes of Hakkari. There are many ingredients in this flavor such as wheat for ashura, arm or ribs, strained yogurt, flour and eggs. It is made from ingredients such as pounded wheat, bone meat, ground beef, cracked rice, yogurt, parsley, salt, black pepper, chili flakes and thyme. Wheat is boiled in a saucepan, yoghurt made into buttermilk is poured into it and stirred until it boils. Pre-boiled meat with bones and small meatballs made from minced meat are added to the boiling dish. Boil for about 15 more minutes. Add a handful of thyme and take it off the stove. Hot oil is poured into the dish, which is placed on the plates, by adding chili pepper and served.
