Elbasan Pan
Elbasan pan is a traditional Albanian dish made by baking boiled lamb in a yoghurt sauce. It takes its name from the city of Elbasan in Albania. It is also made in Turkish cuisine. Cubed lamb meat is boiled with flavoring materials such as onions, bay leaves, black peppercorns and after cooking, fiber is shredded. As another type of preparation, the meat is roasted with onions, but not shredded.
