Eşgi Cabbage
Eşki Cabbage - Bayburt
Ingredients for Sour Cabbage:
250 gr. piece of meat or roasting
1 kg. sour cabbage (pickled)
1 cup of bulgur
2 tablespoons of lard oil
1 onion (medium),
1 teaspoon of red pepper
2 tablespoons tomato paste (tomato)
1 pinch of salt.
Sour Cabbage Preparation:
The meat is boiled with water for about 20 minutes. Firstly, bulgur is added on it and it is brought to a boil, then small chopped sour cabbage is added. In another bowl, the onions are cooked by mixing oil, red pepper and tomato paste until they turn pink. This mixture is put into the sour cabbage. It is cooked with roasting and the mixture is added at this stage and cooked for about 45 minutes. After resting for a while, the service is done.
