Fried Anchovy
Meal consisting of medium-sized anchovies dipped in corn flour and fried in a high fire, using little oil, by arranging them in a fish frying pan to cover the entire surface of the pan.
When anchovy is mentioned in Trabzon, the flowing waters stop. Approximately 9 out of 10 anchovy production in our country is made in the Eastern Black Sea Region. Trabzon has an important place in this production. There are many different types of food in the city related to anchovy.
