Gölhisar Roast
The tail fat is finely chopped and placed on a plate. In addition, the cut and rested meat is cleaned from the nerves and chopped into leaves. A piece or three portions of meat is put into the well-melted tallow on a metal sheet placed on the stove that is ignited with juniper or oak wood. It is cooked quickly by turning it with a colander. It is salted and mixed until it is cooked. Served with onions and tomatoes.
