Hıngel

Another of Ardahan's delicious pastry dishes is Hıngel, a large ravioli made with potatoes. Also known as Hengel in some regions, ravioli is made by putting boiled and mashed potatoes into hand-rolled triangular doughs. Mantı, which is boiled longer than normal ravioli, is served with garlic yogurt and sauce.
