Humus
Humus, which comes out with the combination of tahini, chickpeas and garlic and leaves a distinct taste on the palate with its unique decorations and flavor, is among the most popular foods in the gastronomy city Hatay. It is usually consumed as a cold appetizer in Hatay and as a hot main course in Tarsus. the oats are soaked overnight. It is boiled in a saucepan until very well cooked, the water is filtered. It is passed through a fine sieve twice. The lemons are juiced, the garlic is beaten, the tahini is mixed into the mashed chickpeas and salt is added into it. This mixture is spread on a serving plate. Sprinkle cumin, ground pepper and drizzle with olive oil. It is garnished with tomatoes, pickles and parsley.
