İnceğiz Soup
Another local Ankara dish that contains lamb is İnceğiz soup. This time it's a juicy food. It is one of the indispensable soups of winter days. This delicious taste, prepared with a mixture of lamb meat, boiled chickpeas and wheat, is very satisfying due to the nutrients it contains as well as its taste. You can even double the flavor of the soup with the oil you pour on it.
Incegiz soup, which is mostly served as a starter before the main meal in Ankara, can be made simply at home, as the ingredients are easily available. Put the boiled chickpeas in the pot with the wheat and the meat you cut into small pieces, add some hot water to it, then add a few pieces of purslane and salt and let it cook. Then add flour and water to the yogurt and whisk. Take some of the boiling water in the pot and add it to the mixture you whipped and add it to a separate pot. You can enjoy Incegiz soup by melting the oil and red pepper powder and pouring it over the soup you put on the serving plate.
