Istanbul Rice
Istanbul Rice, whose history goes back 7000 years, came to Central Anatolia from India, so it became one of the favorite dishes of the Palace cuisine .
Rice, wheat, rye and barley were among the most important grain products of the Ottoman Empire. In order to avoid the deficiencies of these basic products, various laws regarding these products and export rules have been enacted. (For example, a baker had to store enough flour to produce in his oven for 6 months.) Since it was not produced in the country and it was expensive, the Palace and wealthy families would give plenty of rice to accompany their meat in various ceremonies.
