Kibe mumbar (bumbar), one of the most famous dishes of Diyarbakir cuisine, which is famous for its offal, is made from the large intestine or tripe of a lamb, unlike the classical stuffed mumbar. In this Diyarbakir-specific flavor, a spiced mortar, especially mint, is used.
