Kıtel Raha

Kitel raha is one of Mardin's famous Syriac dishes. The dish, which we can call the plain and mortarless version of kibbeh, is boiled in water by giving it a flat shape. Due to the fact that bulgur is hearty, the dish that Syriac nuns often eat on fasting days is called kitel raha because it smells like basil. In fact, it is said that if you ate a well-made kitel, it would keep you full all day. You can easily find kitel raha in Mardin, especially in restaurants where Syriac dishes are served, and if you come across Syriac church rites during your trip to Mardin, you can also eat it from their own hands.
