Kıygaşa

If you enjoy consuming pastries for breakfast, I'm sure you'll like kıgaşa, which is very similar to pastry. Like many tastes of Eskişehir cuisine that are consumed with pleasure, this recipe, which is also called "keşmeşe", is of Crimean Tatar origin. Tatars bake the pastry and distribute it to their neighbors and relatives on special occasions such as eve and oil lamp, just like in the Aegean. Thus, this recipe ceases to be an ordinary dish and strengthens neighborly relations. The preparation of kıygaşa, which can be eaten on plates full of cheese and tea, is quite simple. The prepared dough is cooked by throwing it into hot oil. Sometimes black cumin can be added to the dough for extra flavor. Even though its plain is quite famous and common, if you find the opportunity, I recommend you to try the stuffed ones. In the interior, either curd cheese or minced meat is used.
