Kömbe

Kömbe, which is a flavor unique to Hatay, is among the indispensable dessert flavors after künefe. It is a delicious type of cookies made during the holidays. Wooden molds are used to shape the cube and determine its thickness. Apart from these molds, there is no kömbe. There is oil, sugar, spice, flour and water in the kofte. First, the water is boiled and the oil is heated. In it, sugar is dissolved. Then add spices, baking powder, vanilla and flour. It is cooked for 20-25 minutes. Mix the oil, milk and sugar thoroughly by hand in a rimmed bowl. Mahleb, nutmeg, mezeki (drop gum), salt, baking soda, milk are put into it and kneaded very well together with flour. The dough in the softness of the earlobe is rested for half an hour. Then, walnut-sized pieces are taken from the dough, dipped in sesame and shaped with a special mold. It is cooked in a medium temperature oven until it turns pink.
