Kübbülmüşviyye
Bulgur is placed on the tray. Onion is cut into small pieces. Add mint, red pepper and salt. After a little kneading, lean meat is added and the meatballs are kneaded until they reach the consistency of chewing gum. On the other hand, finely chop the tallow in a small tray. It is kneaded with the help of hot water until it becomes like gum. Salt, black pepper, red pepper, mint, nutmeg and cinnamon are added to the kneaded tallow. After kneading, it is broken into small pieces. Each particle is given an almond shape. Large pieces are taken from the meatballs and after a short kneading, group by group is squeezed. Each squeezed kibbeh is carved in the form of meatballs or even slightly larger. It is put in an almond-sized tallow that has been prepared. The mouth is closed with the help of fingers. When they're all done this way, they're cooked on a grill placed over charcoal. Cooking can also be done in the oven. If desired, cooked kübbülüviyyes can be fried again in plain oil.
