Licorice Sorbet
Licorice sherbet, which is an integral part of Gaziantep culture, is drunk especially in summer, on religious days and during Ramadan. Although some Antep residents make it at home, this sherbet, which does not contain sweeteners and consists of all-natural ingredients (licorice root, water, cinnamon powder, cloves and rose water), is usually bought from street vendors. they wear traditional clothes on the streets and carry a large "sherbet tuxedo" on their backs. Sellers sell the licorice syrup on their backs by pouring it into a bowl or glass. They jingle two bowls on top of each other to attract customers and get noticed.
In some religious periods, "charitable" licorice sherbet is distributed on the streets and it is called "spoon". The person who wants to do good by the fountain gives the money for licorice sherbet, makes the sherbet bowls jingle, and distributes sherbet by walking around the neighborhood.
