Maraş Ice Cream

Milk, salep and sugar are used in the production of traditional Maraş ice cream. Traditionally, goat's milk is used: the unique flavor of ice cream is derived from the milk of goats grazed on rattlegrass (astragalus). Another vital element is sahlep, which is obtained from the roots of wild orchids grown in Maraş. This plant gives ice cream its unique smell and texture.
