Molehiya
Molehiya is a dish prepared from the leaves of the Molehiya plant, which grows in the Middle East and North Africa. This dish, which is very popular in Cypriot cuisine, is enriched with bone-in chicken. Served in a deep plate, this dish is served with rice and pickles. First, Molehiya leaves are soaked in hot water. Then the leaves are washed with cold water. Olive oil is put in the pot and the chickens are cooked a little. Chickens are removed from the pot and rested on a plate. In the same pot, fry the crushed garlic and chopped onion. When the onions turn color, chicken and Molehiya leaves are added and frying is continued. The tomatoes are diced. It is prepared by mixing tomato paste with approximately 300 ml of water. Tomatoes and tomato paste are added and left to cook with the lid closed.
