Mulberry molasses
Bush pieces, flies and insects are removed and washed from the mulberries. The washed mulberries are placed in a large pot, called a teşti or a cauldron with water . It is boiled in this way for half an hour. The colander is then placed over a suitable sized bowl. A clean cheesecloth is laid on the colander and the boiled mulberry is filtered from there. The remaining grains are squeezed well with the help of cheesecloth or put in a sack and a weight (stone etc.) is pressed on it to tighten it well. The mulberry juice obtained is put back on the stove and boiled. The foam accumulated on it during boiling is continuously removed by means of a colander. After it reaches its consistency (honey-like fluidity), the container is taken off the fire and passed through a sieve. Then it is filled into a pot or other container and left to cool.
