Ovmaç Soup
Ovmaç soup is another Rumelian delicacy that was brought to the region by immigrants from Bulgaria and Greece during the population exchange period. We come across this soup in many parts of Thrace as well as in various regions where immigrants settled.
It is known by names such as Uvmaç Soup or Umaç Soup due to the local dialect. It got this name because the dough, which is treated with eggs and very little water, is rubbed in the palms and divided into pinches.
