Saleeg

Saleeg is one of the traditional dishes of the Saudi Kingdom, especially in Mecca and Tabuk region, prepared for special occasions. It originated in the Hejaz region of western Saudi Arabia, where it is considered a national dish.

Saleeg is very easy to prepare because there is no chopping or grinding involved! Just two steps, make broth and overcook the rice! Yes, no fear of overcooking either! This rice dish is usually prepared by boiling the chicken with all the spices and then cooking the rice in the prepared stock. After the rice is cooked, milk is added and cooked until it reaches a creamy consistency. If you have gum, add it to the rice for flavor. Traditionally, Saleeg is served hot on large plates called Tabasi and roasted chicken or meat is placed on top of rice.
