Turnip Juice, Adana's famous drink, is a must for kebab. It takes quite a while to make. It is made by adding black carrot, turnip plant and cetic, leaving it in water for fifteen to twenty days and then fermenting it. The fact that the jar in which it is kept is made of oak wood and the lengthening of the holding and fermentation time increases its quality and flavor.
