Şeftali Kebab
Şeftali Kebab is a dish unique to Cyprus. It is a type of kebab made by filling the oily inner membrane of a sheep or goat, also called "shirt", with minced meat, onion and parsley, wrapped in stuffing, and cooked on a skewer or on the grill. While cooking, the fat in the dice melts, the rest of the dice dries up and becomes red, while this part is peeled off and set aside. The membrane protects the stuffing from the scorching fire of the grill fire, so it protects the digestive system quite a bit from cancer-causing things caused by this extreme heat. The lamb's shirt, or as the Cypriots say, "Banna", is thoroughly washed until the smell is gone and it is ensured that it is clean. Then, for internal preparation, low-fat ground beef, black pepper, parsley, light cinnamon, dry bread crumbs, onions are placed and cooked on the barbecue.
