Şevketi Bostan

Şevketi bostans are cleaned, washed thoroughly and chopped into 3-4 cm lengths. Then, the oil is heated in a saucepan, the meat is added, and it is roasted until the water is absorbed. Chopped onion is added and fried until it turns color. Şevketi is added to the bostan and mixed, and the lid of the pot is closed and left to cook on low heat. When the herbs begin to soften, hot water and the juice of half a lemon are added and the artichoke bowls are covered. The remaining lemon juice and flour are added to the egg yolk and whisk. A little of the water of the dish is added and warmed up. When the vegetables and meat are soft, they are poured into the pot. It is boiled one more time, the salt is adjusted and the bottom of the stove is turned off.
