Sheikh Mualla (Şıh Mualla)

Sheikh Mualla is a multi-ingredient dish. The main ingredient is eggplant, but there are also lentils and chickpeas. However, sheikhs were called by this name with the thought that they can eat such a flamboyant and rich food. Green lentils are boiled to remain slightly firm, the water is filtered and taken into a deep bowl. Finely chop the tomato, onion, garlic and pepper. It is mixed with tomato paste, olive oil, pomegranate syrup, chickpeas and spices. Eggplants are peeled and sliced lengthwise without plucking. The prepared interior mortar is placed between them and placed in the pot. Add oil and water and cook the eggplants until they are soft.
