Sivas Yufka Pastry
Ingredients
5 eggs
1 tablespoon salt
As much flour as you can take
250 g cheddar cheese
250 gr cheese for pastry
3 tablespoons of butter
1 tea glass of oil
Mix all the ingredients and knead a medium hard dough which does not stick to your hands.
Take 8 balls of dough, cover it with a damp cloth and let it rest for 1 hour.
Meanwhile, mix the cheese and melt the butter.
Boil 3-4 liters of water in a large pot by adding salt.
Prepare cold water in another pot.
Roll out the balls as thin as phyllo.
The first phyllo is laid on the greased tray without boiling.
Put the other phyllo sheets into the boiling water one by one, keep them for about 30 seconds and then put them into cold water.
Drain them from the cold water and place them on the tray.
Spread a mixture of 2 tablespoons of melted butter and vegetable oil on it.
Repeat this process until 4 phyllo sheets are finished. After the 4th phyllo, put the cheese mixture and apply the same process to the remaining 3 phyllo sheets.
Lay the 4th phyllo on the top of the tray without boiling.
Cook over low heat on the stove by turning it.
Turn it upside down with the help of another tray and fry the other side as well.
