Soğanlama

Soğanlama is one of the special recipes offered to the sultans in the Ottoman palace cuisine. To make Ottoman style onions, first of all, after the onions are chopped as piyaz, the lid is opened and sauted in a deep pot for three to three and a half hours in their own juice, then the spices are added as in recipe. Finally, the egg is broken and served.
