Sura
Sura, one of the famous meat dishes of İzmir, is one of the traditional dishes of İzmir. This dish, which is usually made from the bones of the sacrificial meat, is also made from lamb ribs and chicken. This dish, which is cooked in the oven in copper pots after delicious spicy pilaf is placed in the ribs, is a very heavy dish due to the butter, tomato paste and the meat's own fat.
