It is a dish that is mostly made during sacrifice feasts and preferred on special occasions. The forearm of the lamb is opened from the rib side with a knife, and the pre-prepared stuffed rice is filled. This section is sewn with needle thread. The tomato paste diluted in a bowl is spread on the meat. Meat is cooked by adding water to the cooking pot. Especially in Havran Büyükdere and its vicinity, the taste of the Suras, which are cooked by plastering the kiln mouth with mud in earthen ovens, is insatiable.
