It is one of the geographically marked flavors of Yozgat. Tandoori Kebab; It is made from the rib and thigh sections of young mutton. It has its own large oven. The walls of this furnace are made of bricks. In the oven (tandoor) made of bricks, the meat is left hanging on the stick in a mechanism and attached to the stick with hooks. The wood fire burns at the two ends of the oven, and the meats are placed in the middle of the oven, the meat cooked only with heat without touching the fire; They drip the oil into the chamber below. These oils are used to lubricate the pita bread that will be served with the kebab.
