Tulum Kebab

Aksaray Tulum Kebab, which is made in restaurants in Aksaray today, was a dish made by shepherds in the past. While the shepherds in the Aksaray region were grazing their flocks, they would dig a well before setting out, cover the overalls they took from the sheep with the spices they brought with them, put large pieces of meat in it, then sew the overalls and cook them. In order for the overalls not to burn, they would lay thick leaves they had collected from the surrounding area, sprinkle them with earth, and light a fire on the top. This fire was lit so that it would not be understood from the outside that the kebab was being cooked. When the shepherds returned from grazing, they opened the well and ate the cooked kebab there. The story of the dish, also known as "thief's kebab" in the region, is due to the shepherds who know each other taking the lamb and cooking it without knowing each other while joking with each other, the owner of the lamb inviting the shepherd, the kebab being eaten with a fun conversation, and the next time the right to grab the lamb is passed to the other shepherd.
