Walnut Jam
Green walnuts, which are collected and peeled from walnut trees, are kept in water in a large basin in a cool environment for 6-7 days, provided that the water is changed twice a day. After the waiting period is completed, lime is added to the water of the walnuts and kept in lime water for 8-10 hours. The walnuts extracted from the lime water are rinsed by washing with plenty of water. Then the walnuts are boiled by changing the water 3 times. Boiled walnuts are pierced with the help of skewers and the almonds that have been boiled and peeled beforehand are placed in the walnut. The walnuts, which are kept for two hours in plenty of lemon water, are taken into the pot. For every 100 walnuts, 2.5 kilos of sugar and 2 glasses of water are added. Some cloves are added. First, the sugar must melt on low heat. Until the sugar dissolves, the walnuts also release water. The pot taken from the fire is left for 5-6 hours. Then the boiling process is repeated one or two times until the consistency is reached.
