Ziron

Ziron is one of the famous flavors of Bayburt. Dough, yoghurt, garlic, butter, vegetable oil, tomato and sweet pepper paste are the necessary ingredients. The dough is laid out on a flat surface and formed into a roll. Afterwards, these rolls are cut in 2 to 3 cm lengths and placed vertically in the tray. Mix the butter with the oil and melt it a little in the pan. It is poured over the phyllo dough on the tray and fried in a preheated 180 degree oven.

While the yufkas are cooking, two different sauces are prepared. First, yoghurt and garlic are mixed well and brought to a suitable consistency. For the other sauce, tomato paste and oil are required. Oil and tomato paste are heated in a pan. After the phyllo rolls fried in the oven are taken out, first yoghurt sauce and then tomato paste sauce are poured on them and they are ready to be served.
